HARRY’S HOT SAUCE BLEND "Copycat"- Chili powder, paprika, cayenne, cinnamon, cloves, garlic, marjoram, black pepper and thyme to top your burgers and hot’s. Makes 2- 1 quart batches. Net wt 2.0 oz. (56 g)

Directions: Add 3 1/2 TB for 1 quart of hot sauce. Use to top hamburgers, hotdogs and French fries. Freeze in small containers or ice cube trays for future use. This freezes very well. Serving size: 2 whole quarst

This is a very special recipe. A good friend, Dick, gave this recipe to me and said it was from our famous “Harry’s Hots” in Rochester, NY, where all the kids used to go after hours and eat ourselves sick. My version is a lot healthier (in the day, they used the grease off the grill from everything cooked on it) but it is the best hot sauce I have ever tasted. I think of him every time I make it. This is for you Dick.

2-3 stalks celery
1 large onion
1 lb *cheap ground beef
1T salt
2 dashes Tabasco
1 quart water

Chop fine the celery and onion . (I put it my food processor and pulse) In a skillet, brown hamburger. While this is cooking you can add all the other ingredients (except the onions and celery) into a large sauce pan. Remove the meat but leave the grease in the pan. Add and sauté the chopped veggies until soft. Add veggies, meat AND the grease. You have to have the grease! Simmer for 2 hours stirring occasionally. Enjoy on hots, hamburgers and fries.

*I once made this with lean ground beef and was not as good as the less lean. I guess some things you just can’t change.
